Taro Kimchi Fries

Ingredients
🥔 1 lb. taro
🥓 6 bacon strips
🧅 1⁄2 red onion (thinly sliced)
🥬 1 cup of kimchi (chopped)
🧂 Salt, pepper, and paprika to taste
🧀 1 cup of shredded Monterey Jack cheese
🌶️ Serrano pepper (thinly sliced), adjust for spice level
🧅 Green onions for garnish
⚫ Black sesame seeds for garnish
Instructions
1- Prep the Taro:
- Begin by peeling the taro and cutting it into strips. Rinse the strips thoroughly until the water runs clear. Allow the taro strips to dry by placing them in a strainer.
2- Cook the Bacon:
- In a skillet over medium heat, fry the bacon strips until they're just below crispy. Remove the bacon, set aside, and preserve the bacon grease in the skillet.
3- Sauté Onion and Kimchi:
- In the same skillet with the residual bacon grease, add the thinly sliced red onion and chopped kimchi. Sauté for about 5 minutes until the onions are soft and the kimchi is fragrant.
4- Fry the Taro Strips:
- Heat a separate pot or deep fryer with enough oil to deep fry the taro strips. Fry them on medium-high heat until crispy on the outside and tender inside. This should take around 5-7 minutes. Once done, remove them from the oil and drain on paper towels.
5- Season the Fries:
- Immediately season the fried taro with salt, black pepper, and paprika to taste.
6- Assemble and Broil:
- In an oven-safe dish, spread the seasoned taro fries. Sprinkle half of the shredded Monterey Jack cheese over the fries. Add the sautéed onions and kimchi mixture on top, followed by the remaining cheese.
7- Broil:
- Place the assembled dish under the broiler in the oven for a few minutes, just until the cheese is melted and bubbly.
8- Garnish and Serve:
- Remove from the oven and garnish with sliced serrano peppers, green onions, and a sprinkle of black sesame seeds. Serve immediately.
