Ingredients
🌽 4 cups corn
🧈 1 stick of butter (8 tbsp), cold
🥄 1/4 cup vegetable shortening
🍚 1 cup sugar
🥚 4 eggs
🍦 1 tsp vanilla extract
🌾 3/4 cup all-purpose flour
✨ 1 tsp baking powder
🥄 1/2 tsp baking soda
🥛 2/3 cup evaporated milk
Instructions
1- Prepare the Corn:
- Avoid using a blender for the corn. Prefer manual grinding tools like a grinder or molino. Alternatively, use a food processor or chop finely. Place the ground corn in a strainer and allow it to drain excess liquid.
2- Mix the Wet Ingredients:
- Combine the cold butter, vegetable shortening, and sugar in a large mixing bowl. Beat until fully incorporated and creamy. Add the eggs one by one, mixing continuously. Pour in the evaporated milk, followed by the vanilla extract, and mix thoroughly.
3- Combine with Dry Ingredients:
- Gradually integrate the flour, baking powder, and baking soda into the wet mixture. Stir until smooth and well-combined.
4- Add the Corn:
- Gently fold the drained corn into the batter, ensuring an even distribution.
5- Prepare the Baking Pan:
- Grease a 10-inch round pan (or use a 12-inch pan or even a cupcake mold for variation) with vegetable shortening. Lightly dust with flour to prevent sticking.
6- Bake the Cornbread:
- Preheat your oven to 350°F (175°C). Pour the batter into the prepared pan and bake for approximately 45 minutes, or until the top turns golden brown. Baking time may vary based on the pan size or corn juiciness.
7- Check for Doneness:
- Insert a toothpick into the center of the bread. If it comes out clean, the bread is ready.
