Spicy Watermelon Popsicles

Infused with Thai chili pepper honey and a hint of chamoy and tajin, this popsicle is perfect for those who love sweet and spicy flavors. And don't forget the vibrant green topping made from watermelon rind.
Ingredients
🍉 8 cups diced watermelon
💧 1 cup water
🌶️ Thai Chili Pepper Honey (to taste)
🧃 1/2 cup chamoy
🌿 1/4 cup tajin (plus extra for garnish)
🍈 4 cups diced watermelon rind
🍋 1 lime
💧 4 cups water
🌿 Green food colorant (optional)
Instructions
1- Prepare the Watermelon Mix:
- In a blender, combine the diced watermelon, 1 cup of water, and a generous amount of Thai chili pepper honey.
- Blend until smooth. If using a watermelon with seeds, strain the mixture to remove seeds.
- Pour into a pitcher and add chamoy and 1/4 cup of tajin. Mix well.
2- Fill Popsicle Molds:
- Pour the watermelon mix into popsicle molds, leaving about 2 centimeters of space at the top for the green layer.
- Insert popsicle sticks and place the molds in the freezer for at least 2 hours.
3- Prepare the Green Rind Mix:
- In a blender, combine the diced watermelon rind, juice of 1 lime, 4 cups of water, and more Thai chili pepper honey.
- Blend until smooth and strain to get a clear liquid.
- Add green food coloring if desired for a vibrant green color.
4- Complete the Popsicles:
- Fill the remaining space in the popsicle molds with the green rind mix.
- Freeze for an additional 3 hours or until fully set.
5- Unmold and Store:
- To easily remove the popsicles, quickly dip the bottom of the molds in warm water.
- Transfer each popsicle to a plastic bag or sandwich zip bag for storage and keep them in the freezer until ready to serve.
