Ingredients:

  • 🌶️ 4 guajillo peppers (no seeds, no stems)
  • 🌶️ 3 small ancho peppers (no seeds, no stems)
  • 🌶️ 10-15 chile de arbol (no stems)
  • 🌶️ 4 dried chipotle peppers (no stems)
  • 🧄 3 garlic cloves
  • 🧅 1/4 onion
  • 🦞 2 lobster tails
  • 🥄 2 teaspoons cooking oil
  • 🧂 Salt to taste
  • 🧂 Black pepper to taste
  • 🥔 Optional: Potatoes for serving
  • 🍞 Optional: Bread or tortillas for serving

Instructions:

  1. Prepare the Peppers:

    • Remove the seeds and stems from the guajillo, ancho, chile de arbol, and chipotle peppers.
  2. Cook the Peppers:

    • Place the prepared peppers, garlic cloves, and onion in a pot. Cover with water and bring to a boil.
    • Cook until the peppers are tender, then drain, reserving some of the cooking liquid.
  3. Make the Salsa:

    • Allow the pepper mixture to cool slightly. Transfer to a blender, adding some of the reserved cooking liquid.
    • Blend until smooth to create a rich, spicy salsa.
  4. Cook the Lobster:

    • Heat 2 teaspoons of cooking oil in a pan over medium heat.
    • Add the lobster tails and season with salt and black pepper to taste.
  5. Combine and Serve:

    • Pour the prepared salsa over the lobster in the pan.
    • Optionally, add some water to thin the sauce if desired.
    • Serve hot with potatoes, bread, or tortillas as side items.
