- 🍅 3-4 tomatillos
- 🧅 1/2 onion
- 🧄 3-4 garlic cloves
- 🌶️ 1 Thai chili pepper
- 🧅 Diced red onion
- 🌿 Fresh cilantro
- 🍋 A squeeze of lime

For the Tortillas:
🌽 2 cups masa flour (Maseca)
💧 1 1/2 cups water
🧂 A pinch of salt
For the Salsa:
🍅 3-4 tomatillos
🧅 1/2 onion
🧄 3-4 garlic cloves
🌶️ 1 Thai chili pepper
Garnish:
🧅 Diced red onion
🌿 Fresh cilantro
🍋 A squeeze of lime
Instructions:
- Prepare the Chicken Marinade:
- In a large mixing bowl, combine onion powder, garlic powder, ginger, cumin, coriander, turmeric, hot paprika, cayenne pepper, and salt. Mix well.
- Add the chicken thighs to the bowl, ensuring they are fully coated with the marinade. Cover the bowl and refrigerate for at least 30 minutes, or overnight for more intense flavors.
- Make the Tortillas:
- In another bowl, mix masa flour, water, and a pinch of salt until a dough forms. Knead it well.
- Let the dough rest for 5 minutes.
- Divide the dough into small balls and flatten them using a tortilla press or a rolling pin to your desired thickness.
- Heat a skillet over medium-high heat and cook the tortillas for about 1-2 minutes on each side, until lightly golden. Keep warm.
- Prepare the Salsa:
- Preheat your broiler.
- Place tomatillos, onion, garlic cloves, and Thai chili pepper on a baking sheet. Broil until they are charred, flipping occasionally.
- Allow to cool slightly, then blend until smooth. Season with salt to taste.
- Cook the Chicken:
- Heat a skillet over medium heat. Add a bit of oil if needed.
- Cook the marinated chicken thighs, turning occasionally, until cooked through and slightly charred, about 6-8 minutes per side.
- Slice the chicken into strips once done.
- Assemble the Tacos:
- Place the sliced chicken onto the warm tortillas.
