Indulge in this rich and creamy skillet spaghetti that brings together the earthy flavors of Portobello mushrooms and smoky ham. This sumptuous dish is perfect for a comforting family meal or an impressive dish at your next dinner party.

Ingredients:

🍝 1 pack (16oz) spaghetti (cook in boiling water with a teaspoon of salt)
🍄 16oz Portobello mushrooms, cleaned and thinly sliced
🧈 4 tablespoons butter
🧂 Salt and pepper to taste
🥓 16oz smoked ham, sliced and cut into small squares
🧀 12oz cream cheese (1 and a half bars)
🥛 2 cups heavy cream
💧 2 cups of pasta water (reserved from boiling spaghetti)
🧀 1 cup shredded mozzarella cheese (for the sauce)
🧀 2 cups mozzarella cheese (for topping)


Instructions:

Cook the Spaghetti:

  • Bring a large pot of water to a boil. Add a teaspoon of salt and the spaghetti. Cook until al dente. Reserve 2 cups of pasta water and then drain the spaghetti.

Prepare the Mushrooms:

  • Remove the stems from the Portobello mushrooms, clean them, and slice thinly.

Sauté the Mushrooms and Ham:

  • In a large skillet over medium heat, melt the butter. Add the mushrooms and sauté until they start to brown. Season with salt and pepper.
  • Add the smoked ham pieces to the skillet and fry together with the mushrooms for a few minutes.

Make the Cream Sauce:

  • With the mushrooms and ham still in the skillet, add the cream cheese broken into smaller pieces. Stir until it begins to melt.
  • Gradually add the heavy cream and 1 cup of shredded mozzarella, stirring continually until you have a smooth, creamy sauce.

Combine with Spaghetti:

  • Add the cooked spaghetti to the skillet. Pour in the reserved pasta water and mix thoroughly to coat the spaghetti with the creamy sauce.

Bake and Serve:

  • Transfer everything to an oven-safe dish if not using an oven-proof skillet. Sprinkle 2 cups of mozzarella cheese over the top.
  • Broil on low heat in the oven until the mozzarella topping is melted and bubbly.

Garnish and Serve:
