Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes
Servings: Serves 3-4 people
Equipment:
- Air Fryer
- Cutting board and knife
- Blender or food processor
- Spoon for stuffing
- Saucepan
Instructions:
- Preheat your air fryer to 380°F.
- Carefully cut a line along one side of the sweet peppers, removing the seeds and creating a pocket for the filling.
- In a mixing bowl, combine the ground beef, diced red apple, minced shallot, minced garlic clove, raisins, and dried cranberries. Season with kosher salt and black pepper to taste.
- Stuff each pepper with the beef and fruit mixture until well-filled but not overflowing.
- Place the stuffed peppers in the air fryer and cook for 20 minutes or until the meat is cooked through and the peppers are tender.
- While the peppers are cooking, prepare the sauce. In a blender, combine the diced mushrooms, cashews, heavy cream, and chicken bouillon. Blend until smooth. If you desire a dairy-free option, substitute heavy cream with chicken stock.
- Transfer the sauce to a saucepan and warm over medium heat until heated through, stirring occasionally.
- Once the peppers are cooked, remove them from the air fryer.
- Serve the stuffed peppers generously drizzled with the creamy cashew-mushroom sauce.
- Garnish with a sprinkle of black sesame seeds.
Cooking Tips:
- For a firmer sauce, allow it to simmer and reduce until it reaches your desired consistency.
- If you do not have an air fryer, bake the stuffed peppers in a preheated oven at 375°F for about 35-40 minutes.
- The raisins and craisins add a sweet touch to the savory filling; you can adjust the amounts to your preference.
