Grilled Mexican Hotdogs
These Grilled Mexican Hotdogs are a gourmet twist on the classic hotdog, combining bold flavors of spicy hot links, crispy bacon, and a fresh pico de gallo topping. Perfect for grilling season, these hotdogs bring a taste of Mexico to your backyard barbecue.
Ingredients:
For the Hotdogs:
- 🌭 1 pack of hot links
- 🥖 2 French baguettes
- 🥓 8 strips of bacon
- 🧅 1 large onion
- 🧈 4 tbsp of butter
- 🥄 Mayonnaise (to taste)
- 🍅 Ketchup (to taste)
- 🎨 Mustard (to taste)
For the Pico de Gallo:
- 🍅 2 Roma tomatoes
- 🧅 1/2 onion
- 🌶️ 2 jalapeños
- 🍈 1 lime
- 🧂 Salt (to taste)
- 🧂 Black pepper (to taste)
Instructions:
- Prepare the Pico de Gallo:
Chop the Roma tomatoes, 1/2 onion, and jalapeños into small, even pieces. Combine them in a bowl. Squeeze the juice of one lime over the mixture, and season with salt and black pepper to taste. Stir well and set aside to let the flavors meld. - Grill Preparation:
Preheat your grill to medium-high heat. - Grill the Onion:
Slice the large onion and wrap it in foil with butter and a sprinkle of salt. Place the wrapped onion on the grill to cook until soft and golden, about 15-20 minutes. - Cook the Hot Links and Bacon:
Wrap each hot link with a strip of bacon, securing the ends with a toothpick. Place them on the grill and cook, turning occasionally, until the bacon is almost crispy, about 10-15 minutes. - Prepare the French Baguettes:
Cut each baguette into three or four pieces, depending on their size. Slice each piece almost all the way through to create a bun shape. Place them on the grill to warm and lightly toast. - Assemble the Hotdogs:
Spread mayonnaise and mustard inside each warm baguette. Place the grilled hot link inside the bun. Top with a drizzle of ketchup, grilled onions, and a generous scoop of pico de gallo.
Optional Additions: Feel free to add other toppings such as cheese, avocado, or cilantro for extra flavor.
