Long Fusilli with Poblano Cream Sauce

Ingredients:
🌶️ 3 poblano peppers
🍝 1 pack of long fusilli pasta
🧈 4 tablespoons butter
🧄 3 cloves of garlic
🧅 1 shallot
🍗 2 cups chicken stock (or 2 cups water with 1 tablespoon chicken bouillon)
🧀 1 package cream cheese
🧂 Salt and black pepper to taste
🧀 1/3 cup grated parmesan cheese
Instructions:
- Prep the Poblano Peppers:
- Roast the poblano peppers over an open flame or in an oven until the skins are charred and blistered.
- Place them in a plastic bag and let them sweat for 15 minutes. This will make peeling easier.
- Once cooled, peel off the skins and remove the seeds. Chop them into small pieces.
- Cook the Pasta:
- Bring a pot of water to a boil and add a generous pinch of salt.
- Add the long fusilli pasta and cook according to package instructions until al dente.
- Drain the pasta and run it under cold water to stop the cooking process. Set aside.
- Prepare the Sauce:
- In a large skillet, melt the butter over low heat.
- Add the minced garlic and finely chopped shallot, sautéing them until they are fragrant and translucent.
- Stir in the chopped poblano peppers.
- Make it Creamy:
- Pour a small amount of chicken stock into the skillet with the pepper mixture.
- Add the cream cheese and stir until it melts into a creamy consistency.
- Combine and Season:
- Slowly add the remaining chicken stock, stirring until the sauce is smooth.
- Season with salt and black pepper to taste.
- Mix in the grated parmesan cheese, ensuring it melts into the sauce.
- Finish the Dish:
- Add the cooked fusilli pasta to the skillet and toss until the pasta is well-coated with the sauce.
