Ingredients:

  • 🥫 1 can of chickpeas
  • 🥫 1 can sliced beets
  • 🧄 5 garlic cloves
  • 🫒 2 tablespoons olive oil
  • 🌶️ 1/2 teaspoon paprika
  • 🌿 1/4 teaspoon cumin
  • 🫙 1 (8oz) jar of tahini paste
  • 🧂 Salt to taste
  • 💧 Water (as needed for a creamy consistency)
    For Garnish:
  • 🫒 Olive oil
  • 🧀 Feta cheese
  • 🌿 Fresh parsley
  • 🌶️ Paprika

Instructions:

  1. Roast the Garlic:
    Preheat your oven to 400°F (200°C). Place the garlic cloves on a baking tray and roast for about 15 minutes until they are soft and fragrant. Once roasted, allow them to cool.
  2. Prepare the Ingredients:
    In a food processor, combine the cooled roasted garlic, drained chickpeas, and sliced beets. Pulse until roughly combined.
  3. Add Flavor:
    Pour in the olive oil, then add the paprika, cumin, tahini paste, and a pinch of salt. Process until smooth.
  4. Adjust the Consistency:
    Slowly add water to the mixture, little by little, until you achieve a creamy consistency. Adjust seasoning to your taste; you may need a bit more salt.
  5. Final Touches:
    While the hummus is still in the processor, drizzle with additional olive oil, if needed. Add crumbled feta cheese and fresh parsley to your liking. Sprinkle a little more paprika for color and flavor.
  6. Serve:
    Transfer the hummus to a serving bowl. Drizzle with a bit more olive oil and garnish with additional feta cheese, chopped fresh parsley, and a sprinkle of paprika. Serve with rainbow carrots or any preferred vegetables, pita bread, or crackers.
