Steak & Noodles Spring Rolls are a delightful fusion of tender beef, savory noodles, and fresh vegetables, all wrapped in delicate rice paper. These rolls offer a harmonious blend of textures and flavors, making them a perfect appetizer or light meal.



Ingredients:

🥩 250g steak (seasoned with kosher salt and spices)
🧂 Kosher salt (to taste)
🥣 Spice Mix (includes cumin, chili, Sichuan pepper, and MSG)
🫒 3 tablespoons olive oil
🧄 1 clove garlic, chopped
🌶️ 1 teaspoon spicy chili powder
🌿 2 green onions, chopped
🥜 2 tablespoons peanut butter
🍜 100g noodles
🫑 1 bell pepper, sliced
🥬 1 small piece of lettuce
🌱 Spring roll skins
💧 Room temperature water (for soaking spring roll skins)

Servings: Makes about 4-6 spring rolls

Instructions:

  1. Begin by prepping the steak: generously season the steak with kosher salt and the spice mix consisting of cumin, chili, Sichuan pepper, and MSG. Ensure the spices are well massaged into the meat.
  2. In a hot pan, cook the steak to your desired doneness, then let it rest before slicing into pieces.
  3. While the steak is resting, bring a pot of water to a boil, add the noodles, and cook for approximately 2 minutes or according to the package instructions. Drain and set aside to cool.
  4. For the dipping sauce, add the olive oil to a bowl, followed by the chopped garlic, spicy chili powder, chopped green onions, and peanut butter. Mix well to combine. Adjust seasoning to taste.
  5. Prep the spring roll skins by soaking them in room temperature water until pliable.
  6. Lay a spring roll skin flat, and in the center, place a small piece of lettuce, followed by some of the cooked noodles and slices of bell pepper.
  7. Add a piece of the cooked steak on top of the vegetables and tightly roll the spring roll, sealing the ends.
  8. Repeat the process with the remaining ingredients until all spring rolls are prepared.
  9. Serve the spring rolls with the spicy peanut dipping sauce, enjoying a bite of the flavorful rolls dipped into the rich and savory sauce.
