Ojos - Mexican Pan Dulce
Ojos is a delightful Mexican pastry, known for its sweet filling and soft, tender dough. This traditional treat is perfect for enjoying with a cup of coffee or as a sweet indulgence anytime. Follow this authentic recipe to create a batch of delicious Ojos right at home.
Ingredients
For the Rings:
🥣 2 cups all-purpose flour
🧈 2 tbsp vegetable shortening
🍬 2 tbsp sugar
🧂 Pinch of salt
💧 1 cup warm water
For the Filling:
🥛 1/2 cup whole milk
🛢️ 1/2 cup vegetable oil
🥚 2 eggs
🍬 1 cup sugar
🍦 1 tbsp vanilla extract
🍞 2 cups all-purpose flour
🧁 1 tbsp baking powder
🌼 Yellow food colorant (optional)
Instructions
1- Prepare the Dough:
- In a bowl, combine all the ring ingredients except for the water.
- Gradually add the warm water in parts, mixing continuously until you achieve a smooth, non-sticky dough. You may not need all the water.
- Knead the dough until it's well incorporated, then wrap it in plastic and let it rest.
2- Make the Filling:
- In a mixer, combine all the filling ingredients.
- Mix thoroughly until you achieve a smooth batter with no lumps. Use a spatula to scrape down the sides of the bowl if needed.
- If desired, add yellow food colorant for a vibrant look.
3- Shape the Rings:
- Dust your work surface with flour, then roll out the dough to a rectangle about 0.5 cm thick.
- Cut the rolled dough into strips about 2 cm wide and 20 cm long.
- Wet one end of each strip with water and glue it to the other end to form a ring.
4- Assemble and Bake:
- Place the rings onto a sheet pan lined with parchment paper.
- Fill each ring about 3/4 full with the batter.
- Bake in a preheated oven at 380°F (193°C) for about 20 minutes, or until the filling is fully baked and feels like a sponge.
5- Serving:
- This recipe yields approximately 12 Ojos.
- Allow them to cool slightly before serving.
