Ingredients
🧄 2 garlic cloves
🧅 1⁄2 onion
🌿 1 celery stick
🍅 4 Roma tomatoes
🌶️ 6-8 red jalapeño peppers
🧂 Salt to taste
💧 Water
🥄 1 tbsp of white vinegar
🌮 12 tortillas
🍋 2 limes
🧀 6 oz Panela cheese
Instructions
1- Prepare the Salsa:
- Place garlic, onion, celery, Roma tomatoes, and jalapeño peppers in a pot. Cover with water and add a pinch of salt.
- Cover the pot and cook on high for about 15 minutes, or until the vegetables are tender.
- Transfer the cooked vegetables to a blender, add the white vinegar, and blend until smooth. Add more salt if needed.
2- Prepare the Tortilla Chips:
- Cut each tortilla into six pieces (like slicing a pizza).
- In a frying pan, heat oil over medium heat. Fry the tortilla pieces until they turn golden brown and crispy.
- Use a paper towel to absorb excess oil from the chips, then season them with salt.
3- Assemble the Tostaditas:
- Place the tortilla chips in a bowl or serving bag.
- Squeeze lime juice over the chips generously.
- Top with crumbled or shredded Panela cheese and a generous amount of the salsa.
