Cueritos en Escabeche (Pickled Pork Skin)
- 🐖 1 lb of pork skin
- 🌿 2 cloves spice

- 🧅 2 small onion
- 🫒 2 tbsp of cooking oil
- 🌶️ 4-5 serrano peppers, sliced
- 🥕 1 cup of sliced carrots
- 🌿 1 tbsp of Mexican oregano
- 💧 2 cups of water
- 🍶 1 cup of distilled white vinegar
- 🌶️ 1 tsp of chiltepin peppers
- 🧂 Salt to taste

Ingredients
For the Pork Skin:
🐖 1 lb of pork skin
🌿 2 cloves spice
🌿 3 bay leaves

🧄 4 garlic cloves
🧅 1 small onion
🧂 Salt to taste
For the Escabeche:
🫒 2 tbsp of cooking oil
🧅 1 onion, sliced
🧄 4 garlic cloves, sliced
🌶️ 4-5 serrano peppers, sliced
🥕 1 cup of sliced carrots
🌿 1 tbsp of Mexican oregano
💧 2 cups of water
🍶 1 cup of distilled white vinegar
🌶️ 1 tsp of chiltepin peppers
🧂 Salt to taste
Instructions
Prepare the Pork Skin:
Shave any remaining hair on the pork skin. Scrape both sides with a knife to clean the skin and remove excess fat.
Cut the pork skin into strips about one centimeter wide.
Cook the Pork Skin:
Place the pork skin strips in a pot, cover with water, and add about 1 tbsp of salt.
Cook on high heat for approximately 15 minutes.
Strain the cooked skin and rinse it with warm water to remove liquid fat and impurities.
Return the skin to the pot, add remaining pork skin ingredients, and bring to a boil for 10 minutes.
Strain the mixture, rinse off with warm water, and remove all solids, leaving just the pork skin.
Make the Escabeche:
Heat the cooking oil in a pot and add the sliced onions. Cook for a few minutes until they start to soften.
Add sliced garlic, serrano peppers, and carrots to the pot; cook until they slightly wilt.
Season with salt to taste.
Add Mexican oregano, water, vinegar, chiltepin peppers, and cooked pork skin to the pot.
Cook on high heat until the mixture starts boiling. Allow it to boil for about 3 minutes.
Pickling Process:
Transfer everything to a pickling jar and secure it with a lid.
Allow it to cool to room temperature before storing it in the pantry or fridge.
Note: When stored in the fridge, the liquid will thicken like gel. To serve, warm portions as needed.

- The escabeche can be customized with additional vegetables like bell peppers if desired.
