Huevos Estrellados
Huevos Estrellados, or "Divorced Eggs," is a delightful Mexican breakfast dish featuring crispy tortillas, runny beans, and eggs topped with two types of salsa. The interplay of flavors and textures makes this dish irresistible. The crispiness of the bottom of the eggs paired with the richness of the yolk mixing with the salsa is out of this world.
Ingredients
🥚 2 eggs
🫘 1 cup pinto beans, cooked and slightly runny
🧂 Salt, to taste
🐖 1 tablespoon pork lard
🍅 1 fresh tomato, sliced
🧀 Queso fresco, for topping
🌶 Salsa roja, as desired
🌶 Salsa verde, as desired
🌽 2 corn tortillas
Instructions
1- Refry the Beans:
- In a pan, melt the pork lard over medium heat. Add the cooked pinto beans and season with salt.
- Use an immersion blender to mash the beans until they achieve your desired consistency. Fry while stirring occasionally, ensuring they remain slightly runny to mix well with the eggs later.
2- Cook the Eggs:
- In a separate frying pan, add a small amount of cooking oil. Once hot, add the eggs.
- Break the whites slightly to facilitate quicker cooking. Let them cook until the bottoms are crispy and come off the pan easily, ensuring the yolks remain soft.
3- Prepare the Tortillas:
- Tatemadas your corn tortillas by placing them directly on an open flame until charred to your liking. This adds a wonderful smoky flavor to the dish.
4- Assemble the Dish:
- On a plate, place the charred tortillas. Spoon the refried beans onto the tortillas.
- Carefully lay the crispy-bottomed eggs on top.
5- Add the Salsas:
- Drizzle salsa roja over one egg and salsa verde over the other, hence the "divorced" nature of the dish.
6- Finish with Fresh Ingredients:
- Add the sliced fresh tomato to the side and sprinkle queso fresco over the entire dish.
7- Serve and Enjoy:
- Break the egg yolks and allow them to mix with the salsas and beans. Enjoy with additional charred tortillas if desired.
