Instructions:
- Prepare the Pork Belly: Begin by shaving any hair from the skin of the pork belly. Rinse it with cold water, pat dry, and cut it into chunky pieces.
- Make the Marinade: In a blender, combine the juice and pulp of the oranges, lime juice, garlic cloves, half of the onion, achiote paste, allspice, coriander seeds, cumin seeds, peppercorns, chiles de arbol, and water. Blend until smooth.
- Cook the Adobo:
- For Pressure Cooker: Place the pork belly in the pressure cooker. Pour over the marinade, and add in the jalapeño, celery sticks, and bay leaves. Sprinkle with salt. Secure the lid and cook on high pressure for 40 minutes.
- For Stovetop: In a large pot, combine the pork with the marinade, jalapeño, celery, and bay leaves. Sprinkle with salt, cover, and simmer on low heat for about 2 hours, or until the pork is tender and easily shredded.
- Finish and Serve: Once cooked, allow the pressure to release naturally if using a pressure cooker. Taste and adjust seasoning as needed. Serve the adobo hot with garlic steamed rice to enjoy a comforting meal.
