Roasted Spiced Acorn Squash

Ingredients
🎃 1 acorn squash
🌿 2 teaspoons ground sage
🍂 1/2 teaspoon ginger powder
🌶️ 1/2 teaspoon white pepper
🧄 1/4 teaspoon cardamom
🫒 Olive oil (enough to coat)
🍯 1/4 cup of honey
🧀 1/4 cup of feta cheese, crumbled
🌰 1/4 cup of pumpkin seeds
Instructions
1- Preheat Oven:
- Preheat your oven to 400°F (200°C).
2- Prepare Acorn Squash:
- Carefully cut the acorn squash in half and remove the seeds.
- Slice each half into wedges.
3- Season the Squash:
- In a large bowl, combine the ground sage, ginger powder, white pepper, and cardamom.
- Add the acorn squash wedges to the bowl and drizzle with enough olive oil to coat them evenly.
- Toss the wedges in the spice mixture, ensuring each piece is well-covered.
4- Roast:
- Arrange the seasoned squash wedges on a sheet pan in a single layer.
- Roast in the preheated oven for 15 minutes or until tender and golden brown.
5- Finalize the Dish:
- Remove the squash from the oven and immediately drizzle with honey.
- Sprinkle crumbled feta cheese and pumpkin seeds over the top.
