Ingredients
🧅 1/4 onion
🧄 2 garlic cloves
🌶️ 4 jalapeño peppers
🌶️ 8 serrano peppers
🍅 6 tomatillos
🌿 A small bunch of cilantro
🧂 Salt to taste
Instructions
1- Prepare the Vegetables:
- Start by cutting a quarter of the onion into medium pieces.
- No need to chop finely as they will be blended later.
2- Prep the Peppers:
- Depending on your heat preference, adjust the quantity of jalapeños and serranos.
- Remove the stems and slice them in half for even roasting.
3- Prepare the Tomatillos:
- Remove the husk from the tomatillos and give them a quick rinse.
- Tomatillos have a sticky residue that is easily washed away. Cut them in half.
4- Broil the Ingredients:
- Arrange the onion, garlic, jalapeños, serranos, and tomatillos on a baking sheet.
- Place under the broiler for about 15 minutes, or until they develop a nice char and the tomatillos start to soften.
5- Cool Down:
- Allow the roasted vegetables to cool slightly before handling them further.
6- Blend the Salsa:
- Add all the roasted ingredients into a blender.
- Toss in a small bunch of fresh cilantro and blend until smooth.
- Adjust the texture to your preference, blending more for a finer texture or pulsing for a chunkier salsa.
7- Season:
- Add salt to taste, blending a little more to ensure it's evenly distributed throughout the salsa.
8- Serve:
- Pour the salsa into a bowl and serve with tortilla chips or as an accompaniment to tacos, grilled meats, or any dish needing a zesty boost.
