Tacos Tlaquepaque
Experience a unique twist on traditional Mexican tacos with this Tacos Tlaquepaque recipe. Infused with the rich and complex flavor of instant coffee, this spicy salsa perfectly complements tender, shredded beef, creating a taste sensation that will transform any taco night into a culinary adventure.
Ingredients:
For the Meat:
🥩 1 lb beef chuck
🧅 1/4 onion
🧄 2 garlic cloves
🌿 2 bay leaves
🌿 1/2 tsp of thyme
🌿 1/2 tsp of marjoram
🧂 Salt, to taste
⚫ Black pepper, to taste
For the Salsa:
🌶 4 guajillo peppers
🌶 8 chile de árbol
🧄 4 garlic cloves
🧅 1/4 onion
🍏 4 tomatillos
☕ 2 tbsp of instant coffee
🧂 Salt, to taste
⚫ Black pepper, to taste
To Serve:
🌽 Corn tortillas
🌿 Chopped onion and cilantro
Instructions:
- Prepare the Beef:
- Cut the beef chuck into large chunks. Place in a pot with onion, garlic, bay leaves, thyme, marjoram, salt, and pepper. Cover with water.
- Cook over low heat until the meat is tender and easy to shred with a fork. This should take about 1-2 hours.
- Make the Salsa:
- In a separate pot, add guajillo peppers, chile de árbol, garlic, onion, and tomatillos. Cover with water and cook for 10 minutes.
- Drain the vegetables and peppers, reserving the cooking water. Blend the peppers with some of the strained water until smooth.
- Add tomatillos, instant coffee, salt, and pepper to the blender. Blend again until tomatillos are broken down but the seeds remain visible.
- Shred the Meat:
- Shred the cooked beef thoroughly. If there are chunks of fat, chop them finely and mix with the shredded meat.
- Add enough prepared salsa to the beef to make it moist. Mix well.
- Assemble the Tacos:
- Warm the corn tortillas.
- Spoon the beef mixture onto each tortilla. Fold them and drizzle with more salsa.
- Top with chopped onion and cilantro for extra flavor.
