Tejuino is a cold, fermented Mexican drink, traditionally enjoyed in Jalisco and Chihuahua. Made from masa harina and piloncillo, this refreshing and tangy beverage is perfect for hot days and offers a unique, creamy texture.

Instructions

1. Prepare the Masa Dough

o In a bowl, mix the masa harina, salt, and 2 cups of water until you achieve a smooth dough.

2. Make the Piloncillo Syrup

o In a pot, add the piloncillo and 4 cups of water.

o Heat over high heat until the piloncillo dissolves completely, then reduce to low heat.

3. Incorporate the Masa

o Blend half of the masa dough with some water to create a smooth mixture. Gradually add it to the piloncillo syrup while stirring to avoid lumps.

o Repeat with the other half of the masa. Stir continuously until the mixture thickens, then remove from heat.

4. Ferment the Tejuino

o Cover the pot with a cloth or transfer the mixture to a glass or clay container.

o Place it in a dark, cool area and let it ferment for 3 days.

5. Chill and Blend

o After fermentation, refrigerate the tejuino.

o Blend it in portions or all at once with additional water until it reaches a thick, creamy milkshake-like consistency.

6. Serve

o In a cup, add crushed ice, lime juice, and a pinch of salt. Pour the tejuino over the ice.

o For extra flavor, top with lime sorbet and sprinkle with Tajín if desired.
