🥓 1/2 cup pork lard
💧 1 1/2 cups hot water
Instructions:
Prepare the Dough:
- In a large mixing bowl, combine the corn flour and salt.
- Add the pork lard to the flour mixture. Use your hands to blend the lard into the flour until well mixed and crumbly in texture.
Add Water:
- Gradually pour 1 cup of hot water into the mixture. Begin mixing with your hands.
- Continue adding the remaining 1/2 cup of hot water slowly. Mix until a soft dough forms—similar to thick tortilla dough.
Shape the Gorditas:
- Take a small piece of dough and roll it into a ball.
- Flatten the ball by pressing it with your hands to form a thick, round "tortilla" about 1/2 inch thick.
- If you have a gordita maker, use it to achieve an even shape and thickness.
Cook the Gorditas:
- Preheat a nonstick skillet or griddle over medium heat.
- Cook the gordita on the hot pan for about 2 minutes on each side, or until they are golden brown on the outside.
Slice and Fill:
- Once cooked, use a butter knife to carefully slice the gordita halfway through its side. The knife doesn't need to be sharp; just gentle pressure will allow it to separate easily.
