Ingredients:

🍶 1/3 cup of cooking oil
🍚 1 1/2 cup white rice (long grain)
🧅 1/4 cup sliced onion
🧄 2 garlic cloves (minced)
🍲 3 cups of hot chicken stock (or water)
🥄 1 tbsp tomato and chicken bouillon (2 tbsp if using water instead)
🧂 1/4 tsp salt
🌶️ Pinch of black pepper
🌿 A piece of jalapeño and fresh cilantro to taste


Instructions:

  1. Heat: Place a pan over medium heat and add 1/3 cup of cooking oil. Allow the oil to heat up.
  2. Fry Rice: Add the 1 1/2 cups of white rice to the pan, ensuring that all the rice is coated with oil. Stir occasionally, frying the rice until it turns a golden brown color.
  3. Add Onion and Garlic: Once the rice is browned, add the 1/4 cup of sliced onion to the pan. Turn the heat to low and add the minced garlic cloves. Stir to combine the flavors without burning the garlic.
  4. Add Stock: Pour in 3 cups of hot chicken stock or water. Stir gently to mix.
  5. Season: Add 1 tbsp of tomato and chicken bouillon (or 2 tbsp if using water), a pinch of black pepper, and 1/4 tsp of salt. For added flavor, drop in a piece of jalapeño and some fresh cilantro.
  6. Boil and Simmer: Increase the heat to bring the mixture to a boil. Once boiling, cover the pan with a lid, reduce the heat to very low, and let it simmer for 20 minutes. Do not uncover the lid during this time.
  7. Fluff and Serve: After 20 minutes, remove the lid and fluff the rice with a fork. The rice should be perfectly tender with absorbed flavors. Serve hot and enjoy!
