Pedos de Monja
Pedos de Monja, or Nun’s Farts, are charming pastries rooted in Catalan cuisine. Originally called Peaches de Mona, these delightful morsels are celebrated for their light, airy texture and sweet, cinnamon flavor. Perfect for Halloween or any festive occasion, they are a wonderful homage to the popular character “La Monja de la Feria” within the Mexican community.
Ingredients
🥞 2 cups pancake flour mix
🌾 1 cup all-purpose flour
🥛 1 cup whole milk
🍬 3 tbsp sugar
🧁 1 tsp baking powder
🥚 1 egg
🍦 1 tsp vanilla extract
🎃 Cinnamon sugar for coating
Instructions
1- Prepare the Batter:
- In a large mixing bowl, combine the pancake flour mix and all-purpose flour. Stir in the baking powder and sugar to ensure even distribution.
2- Incorporate Wet Ingredients:
- Add the whole milk, egg, and vanilla extract to the dry ingredients. Mix until you have a smooth, lump-free batter.
3- Heat the Oil:
- In a deep frying pan, heat about 2 inches of oil over medium heat, until it reaches 350°F (175°C).
4- Fry the Pastries:
- Using a spoon or small scoop, carefully drop spoonfuls of the batter into the hot oil. Fry the pastries in batches to avoid overcrowding, turning them occasionally until they are golden brown on all sides, about 2-3 minutes per side.
5- Coat with Cinnamon Sugar:
- Once cooked, remove the pastries from the oil and drain them on paper towels. While still warm, roll them in cinnamon sugar to coat them generously.
6- Serve:
- Serve the Pedos de Monja warm for the best texture and taste.
