Chilaquiles Rojos

Ingredients
🧅 1/4 cup thin-sliced onion
🍗 1 cup shredded chicken

🍅 1 cup homemade enchilada sauce
🌽 4 cups tortilla chips
🥚 2 eggs
🥑 1/2 Avocado
🥄 1 tbsp sour cream
🌿 1 tbsp cilantro
🧀 1 tbsp queso cotija
Instructions
1- Prepare Enchilada Sauce:
- Start by preparing your enchilada sauce using the linked recipe or your own favorite version to taste.
2- Cook Onions:
- Heat a little bit of cooking oil in a pan over medium heat. Add the thin-sliced onion, cooking until they are soft and translucent.
3- Add Chicken and Salsa:
- Stir in the shredded chicken and your preferred amount of salsa for spiciness. Season with salt and black pepper to taste. Mix well until everything is well combined and heated through.
4- Combine with Enchilada Sauce:
- Pour the homemade enchilada sauce over your chicken and onion mixture, stirring until everything is coated evenly. Reduce the heat to low and let it simmer for a few minutes.
5- Prepare the Tortilla Chips:
- In a separate larger skillet, add a little more oil if needed and toss in the tortilla chips. Pour the sauce and chicken mixture over the chips, carefully stirring until the chips are well coated. 6- Cook the Eggs:
