Instructions:

  1. Begin by marinating the chicken legs in a mixture of buttermilk, pickle juice, and 1 tablespoon of salt. Let it sit for about 30 minutes, allowing the flavors to infuse and the meat to tenderize.
  2. In a separate bowl, combine the all-purpose flour, potato starch, 2 teaspoons of curry powder, 2 tablespoons of spicy chili powder, and 1 teaspoon of kosher salt to create the seasoned breading.
  3. In a third bowl, beat the 4 eggs, adding a pinch of salt and black pepper to the mix.
  4. Once the chicken has marinated, dredge each piece first in the seasoned flour mixture, then dip into the beaten eggs, and coat again in the flour mixture for a double layer of breading.
  5. Heat oil in a deep fryer or heavy-bottomed pot to 325ยฐF (163ยฐC). Carefully lower the chicken into the oil and fry until golden brown and cooked through, which should take about 17 minutes. Make sure to maintain the oil temperature and avoid overcrowding the pan.
