Instructions
1- Prepare the Yeast:
- Mix the yeast into warm water and let it rest until foamy, around 5-10 minutes.
2- Make the Dough:
In a large bowl, combine the all-purpose flour, granulated sugar, and salt.
Add the eggs and softened margarine to the dry ingredients.
Mix well until the margarine and eggs are well incorporated.
Add the whole milk and yeast mixture to the dough, combining thoroughly.
Knead the dough by hand or with a mixer for 10-15 minutes until slightly sticky and elastic.
Place the dough in a greased bowl, cover it, and let it rise until doubled in size, about 1-2 hours depending on your kitchen temperature.
3- Prepare the Decorating Paste:
Mix shortening, flour, vanilla extract, and powdered sugar until smooth.
Divide the paste into seven equal parts.
Use food coloring to color each part in the colors of the rainbow.
4- Shape the Conchas:
Once the dough has doubled in size, divide it into 16 equal parts.
Roll each piece into a smooth ball and place on parchment-lined baking sheets.
Divide the paste into 16 parts and flatten each between two pieces of plastic using your hands or a tortilla press.
Place one paste circle over each concha dough ball.
5- Make the Concha Pattern:
Use a concha mold, can, or measuring cup to gently press and create the concha pattern on the tops.
Cover and let them rise again until doubled in size.
6- Bake:
Preheat the oven to 350°F (175°C).
Bake conchas for 20 minutes, then rotate pans for even baking and bake for an additional 10-15 minutes.
Dough should be golden brown but ensure the paste remains vibrant and does not turn brown.
Prep Time: 1-2 hours
Cook Time: 30-35 minutes
Total Time: 2-3 hours
Servings: 16 conchas
Equipment: Large mixing bowl, mixer or hands for kneading, baking sheets, parchment paper, tortilla press or rolling pin
Cooking Tips:
- If your kitchen is cold, the dough may take longer to rise. Try placing it in a slightly warm oven to speed up the process.
