Broccoli Pancakes

Ingredients
🥦 2 crowns of broccoli, boiled and chopped (about 4 cups)
🧅 1/4 onion, chopped
🧂 Salt and black pepper to taste
🌶️ 1/2 teaspoon pepper flakes
🥚 4 eggs
🥣 1/4 cup all-purpose flour
🫒 Cooking oil
Instructions
1- Prepare Broccoli and Onion:
- Start by boiling the broccoli crowns until they are tender. Once cooked, drain and chop roughly into small pieces.
- Chop 1/4 of an onion finely.
2- Mix the Ingredients:
- In a large mixing bowl, combine the chopped broccoli and onion.
- Add salt and black pepper to taste, and then sprinkle in the pepper flakes.
- Crack the 4 eggs into the bowl and mix well until all the ingredients are combined.
- Gradually add 1/4 cup of all-purpose flour, ensuring that the mixture is uniform.
3- Form the Pancakes:
- Heat a little cooking oil in a pan over medium heat.
- Using a spoon or your hands, form the broccoli mixture into small pancake shapes.
- Gently place them into the hot pan.
4- Cook the Pancakes:
- Cook each side of the pancakes for about 2 minutes or until golden brown and cooked through.
- Transfer the pancakes onto a plate lined with paper towels to absorb any excess oil.
5- Serve:
- Serve the broccoli pancakes hot with your choice of salsa or dressing. An avocado salsa pairs particularly well with these pancakes.
