Corn & Dulce de Leche Cake

Ingredients
🌽 1 lb frozen corn
🥚 6 eggs
🥛 1 can evaporated milk
🍶 1 can condensed milk
🧈 1 stick unsalted butter
🌾 1/2 cup all-purpose flour
🍦 1/2 tsp vanilla extract
🥄 1 can of dulce de leche
🍶 Whipping cream
Instructions
1- Preheat the Oven:
- Set your oven to 375°F (190°C) to ensure it's nice and hot for your cake.
2- Prepare the Blend:
- In a blender, combine the frozen corn, eggs, evaporated milk, and condensed milk.
- Blend until smooth.
3- Divide the Mixture:
- Pour half of this blend into a separate bowl.
4- Add Dry Ingredients and Butter:
- To the remaining blend in the blender, add the unsalted butter, all-purpose flour, and vanilla extract.
- Blend until well incorporated.
5- Mix:
- Combine both mixtures by folding them together gently in a large bowl.
6- Prepare the Baking Pan:
- Spray a bit of butter or use a non-stick spray to grease your baking mold.
- A 10-inch pan is typical, but if using smaller molds, divide the batter accordingly.
7- Bake:
- Pour the batter into the prepared pan(s) and bake in the preheated oven for about 40 minutes or until a toothpick inserted into the center comes out clean.
8- Prepare the Topping:
- In a microwavable bowl, mix dulce de leche with a little bit of heavy whipping cream.
- Microwave for about 30 seconds, then stir until smooth.
9- Garnish:
- Once the cake is baked and slightly cooled, garnish it with the warm dulce de leche mixture.
10- Serve and Enjoy:
- This cake is wonderful warm but even better when served cold. Enjoy!
