🐖 Pork skin, cleaned of fat and hair
🥓 Pork lard or hydrogenated lard (for frying)
For the seasoning
🌶️ 1 tbsp of chiltepin pepper
🧄 1 tbsp of dried garlic
🧅 1 tbsp of onion flakes
🧂 1 tsp of salt

Instructions
1. Clean the pork skin
o Remove excess fat by scraping the underside of the skin with a sharp knife.
o Shave off any hair using a razor or burn it off with a torch.
o Wash the skin thoroughly in warm water to remove remaining fat and impurities. Pat dry with paper towels.
2. Cut and dehydrate
o Cut the pork skin into medium-sized cubes. Place the pieces in a food dehydrator set to 150°F for up to 12 hours or until completely dry and hard.
o If using an oven, set it to 150-180°F ("keep warm" setting) and dehydrate the skin for 8-12 hours.
o Alternatively, use the dehydrator option on an air fryer.
3. Fry the pork skins
o Heat the lard in a pot to 300-340°F.
o Fry the dehydrated pork skins in batches for 3-6 minutes or until they puff up and become crispy. Remove and drain on paper towels.
4. Make the seasoning
o Blend the chiltepin pepper, dried garlic, onion flakes, and salt into a fine powder using a blender or spice grinder.
5. Season the chicharrones
o While the cracklings are still warm, sprinkle the seasoning over them and toss to coat evenly.
6. Serve
o Enjoy the chicharrones as a snack on their own, or use them as a topping for dishes like salads, soups, or tacos.
