Ingredients
🐖 2 cups pickled pork skin (Cueritos)
🌶️ 2 chiles de árbol
🔥 1 tablespoon chiltepin pepper
🧄 2 garlic cloves
🍋 5 limes, juiced
🧅 1/4 red onion, thinly sliced
🥒 1 cucumber
🎋 1/4 large jicama
Instructions
Prepare the Spice Mixture:
In a molcajete or mortar and pestle, crush the chiles de árbol, chiltepin pepper, and garlic cloves together with the juice of one lime until you have a rough paste.
Add Lime Juice:
Pour the remaining lime juice into the molcajete and mix well with the spice blend.
Prepare the Pork Skin:
Cut the pickled pork skin (cueritos) into small pieces or dice, then add them to the molcajete. Mix thoroughly to coat the pork with the spicy lime mixture.
Add Vegetables:
Incorporate the thinly sliced red onion into the molcajete and mix until well combined.
Prepare the Cucumber:
Cut both ends off the cucumber, peel half of the skin for a striped effect, slice into thick pieces, and add to the molcajete. You can arrange the cucumber slices around the edge of the bowl for decoration or mix them in.
Add the Jicama:
Peel the jicama and cut it into dice or strips. Add them to the molcajete, either on top as a garnish or mixed throughout the dish.
Serve:
Enjoy the aguachile with tostadas. For an added twist, spread some mayonnaise on the tostada before topping it with aguachile.
