Valentine’s Gorditas

Ingredients
🥤 1 1/2 cups warm beet puree or warm water with pink/red food coloring
🌽 2 cups instant corn masa mix
🧂 1/2 teaspoon salt
🧈 1/2 cup pork lard or vegetable shortening
Instructions
1- Prepare the Beet Mixture:
- If using beets, blend a can of whole, sliced, or chopped beets along with the liquid until smooth. Measure out 1 1/2 cups of this puree. If preferred, substitute with warm water mixed with a few drops of pink or red food coloring for a color-only approach.
2- Microwave:
- Warm the beet puree or colored water in the microwave for about 30 seconds. The liquid should be warm, not hot.
3- Mix the Dough:
- In a large mixing bowl, combine the instant corn masa mix and salt. Gradually incorporate the warm beet mixture, stirring until you achieve a smooth, slightly sticky dough that doesn’t cling to your fingers.
4- Shape the Gorditas:
- Divide the dough into eight equal parts, or more, depending on your preferred size. Oil your hands lightly to prevent sticking and shape each piece into a round gordita or patty.
5- Cook the Gorditas:
- Heat a small amount of oil in a griddle over low heat. Cook the gorditas on both sides until they develop a pale color and are cooked through. Expect they might take slightly longer than traditional gorditas because of their moisture content.
6- Make the Pocket:
- While still warm, use a paper towel to hold a gordita and carefully cut a pocket in each with a butter knife.
7- Fill and Serve:
- Fill each gordita pocket with your favorite fillings. Consider pairing them with fritos, salsa, or any other savory ingredients you love.
