Biscoff Bread Pudding

Ingredients
🥄 1 jar of Biscoff Crunchy Cookie Butter
🍞 10 slices of white bread
🍪 1 (250g) pack of Biscoff cookies
🥚 4 eggs
🥛 1 cup of warm milk
🍬 1/4 cup of sugar
🍦 1 tsp of vanilla extract
🌿 1/2 tsp cinnamon
Instructions
1- Prepare the Sandwiches:
- Take the white bread slices and make 5 sandwiches by spreading Biscoff butter between each pair.
- Ensure that you leave about 1/4 of the jar of cookie butter for later use.
2- Cut and Layer:
- Cut the sandwiches into medium-sized squares.
- Grease an oven-safe dish using either butter spray or soft butter.
- Alternate layers of sandwich squares and crumbled Biscoff cookies in the dish.
3- Mix the Custard:
- In a bowl, mix the warm milk with sugar until the sugar dissolves.
- Whisk the eggs separately, then combine with the milk mixture.
- Add the vanilla extract and cinnamon, stirring well.
4- Pour and Soak:
- Pour the custard mixture evenly over the layered bread and cookies.
- Use a spoon to gently press down and ensure that the egg mixture soaks into every piece.
5- Bake:
- Cover the dish with thin foil and bake in a preheated oven at 400°F (200°C) for 20 minutes.
- Remove the foil and bake for an additional 10 minutes to achieve a golden top.
6- Prepare the Topping:
- Soften the remaining Biscoff butter by microwaving it in a zip-top bag for about 10-15 seconds.
- Drizzle and spread it over the baked pudding.
7- Finish with Crumbles:
- Sprinkle additional crumbled Biscoff cookies on top for an added crunch.
