Sopa de Queso
Sopa de Queso, or Cheese Soup, is a delightful Mexican dish that brings warmth and flavor to any occasion. This creamy, savory soup combines roasted Anaheim peppers with rich Panela cheese, making it a comforting choice for chilly days or a delicious appetizer for your next gathering.
Ingredients
🌶️ 3 Anaheim peppers
🧈 5 tbsp butter
🧅 1/4 onion, diced
🧄 3 garlic cloves, minced
🍃 1 tsp Mexican oregano
🥔 3 potatoes, cubed
🥛 1 can of evaporated milk
🍗 4 cups chicken stock
🌽 2 cans of white corn
🧀 2 (8oz) Panela cheese, cubed
🧂 Salt, to taste
🧂 Black pepper, to taste
Instructions
1- Prep the Peppers:
- Roast the Anaheim peppers over an open flame until the skin is charred completely. Place them in a plastic bag and let them sweat for 10-15 minutes. This process will make the skin easier to peel. Once cooled, peel off the charred skin, remove the stem and seeds, then dice them and set aside.
2- Sauté Aromatics:
- In a large pot, melt the butter over medium heat. Add the diced onion and sauté until it becomes translucent. Stir in the minced garlic and cook until fragrant.
3- Add Vegetables and Seasoning:
- Incorporate the diced Anaheim peppers, Mexican oregano, and cubed potatoes into the pot. Season with salt and black pepper to taste.
4- Simmer the Soup:
- Pour in the can of evaporated milk, chicken stock, and the canned white corn. Stir well and bring the mixture to a gentle simmer. Cover the pot with a lid and cook for about 10 minutes, or until the potatoes are tender but still hold their shape.
5- Finish with Cheese:
- Gently stir in the cubed Panela cheese. Allow the cheese to melt slightly and meld with the soup for about 5 minutes over low heat.
6- Serve and Enjoy:
- Once the cheese is warmed through, your Sopa de Queso is ready to serve. Ladle the soup into bowls and enjoy its creamy, savory goodness.
