Atole (Traditional Mexican Hot Beverage)
Atole is a traditional Mexican drink, perfect for warming you up on a chilly day. This creamy cinnamon version is a comforting treat that pairs beautifully with a fresh pan dulce. Whether you're new to making atole or looking for a classic version, this recipe blends simplicity and tradition with a touch of vanilla sweetness.
Ingredients:
🥛 4 cups whole milk
🥫 1 can evaporated milk
🌿 1 cinnamon stick
🥫 1 can condensed milk
🥛 1 cup whole milk (cold)
🌽 2/3 cup cornstarch
🍦 1 tbsp vanilla extract
Instructions
1- Heat the Milk:
- In a medium to large pot, preferably a clay pot for authentic flavor, combine 4 cups of whole milk, 1 can of evaporated milk, and the cinnamon stick. Place over medium to low heat and stir constantly to prevent scorching.
2- Add the Sweetness:
- Once the milk mixture is hot, add the can of condensed milk. Continue stirring to well incorporate all the ingredients.
3- Prepare Cornstarch Mixture:
- In a separate bowl, mix 2/3 cup of cornstarch with 1 cup of cold whole milk until the cornstarch is fully dissolved and there are no lumps.
4- Thicken the Atole:
- Gradually add the cornstarch mixture into the hot milk, stirring continuously. The atole will begin to thicken as the mixture heats.
5- Flavor with Vanilla:
- Add 1 tablespoon of vanilla extract and stir well. At this point, you can remove the cinnamon stick if you prefer a milder cinnamon flavor.
6- Cook to Perfect Consistency:
- Continue cooking and stirring until the atole has thickened to your desired consistency. It should be slightly thick but still drinkable.
7- Serve:
- Remove from heat and serve hot. Pour into mugs or cups and enjoy with a side of pan dulce for a delightful snack experience.
