Instructions
1. Cook the Turkey
o Add the turkey to a large pot with salt, black pepper, bay leaves, 3 garlic cloves, sliced onion, water, and white vinegar.
o Cover and cook on medium heat for 30 minutes, or until tender.
o Remove the turkey from the pot, shred it, and discard the skin, bones, and tendons.
2. Prepare the Pepper Sauce
o In a separate pot, add the guajillo peppers, árbol peppers, 3 garlic cloves, and ¼ onion.
o Cover with water and cook for 20 minutes until softened.
o Blend the cooked peppers, garlic, and onion with some of the cooking water until smooth.
3. Combine and Cook
o Strain the pepper sauce into the pot with the turkey broth, ensuring a smooth and clear broth.
o Add the shredded turkey to the pot along with the pepper sauce.
o Season with tomato and chicken bouillon to taste and let it simmer for 10 minutes.
4. Make the Quesabirrias
o Heat a griddle over medium heat.
o Warm the corn tortillas on both sides, then add shredded Chihuahua cheese.
o Fold the tortillas over to melt the cheese and crisp the edges.
5. Serve
o Serve the quesabirrias with a bowl of consomé.
o Garnish the consomé with chopped cilantro and onion.
