Ingredients:

🥩 2 lb of beef round
🌿 2 bay leaves
💧 2 cups of water
🧅 1 onion, sliced
🫑 1 green bell pepper, sliced
🧄 2 garlic cloves, minced
🌿 2 tsp of Mexican oregano
🌿 2 tsp of cumin
🌶️ 2 tsp of paprika
🍷 1/2 cup of white wine
🍅 4 oz of tomato paste
🫒 1 cup of green olives
⚫ Black pepper to taste
🧂 Salt to taste
🍚 2 cups of rice
🧄 1 tbsp of garlic powder


Instructions:

  1. Prepare the Beef:
    • Cut the beef round into large chunks.
    • Set your pressure cooker to sauté mode, add a splash of cooking oil, and sear the beef on all sides.
    • Season with salt, pour in 2 cups of water, and throw in the bay leaves.
    • Pressure cook the beef for 30 minutes.
  2. Cook the Rice:
    • While the beef is cooking, prepare the rice. Use a rice cooker, following its specific measurements and instructions.
    • Add the garlic powder to the rice for an aromatic twist.
  3. Shredding the Beef:
    • Once the beef is cooked, shred it finely using two forks. Reserve the cooking liquid for later.
  4. Sauté the Vegetables:
    • Heat some cooking oil in a pan over medium heat.
    • Add sliced onions and green bell peppers, stirring for about 3 minutes until they begin to soften.
    • Stir in the minced garlic, Mexican oregano, cumin, and paprika.
  5. Create the Sauce:
    • Pour in the white wine and tomato paste, stirring the mixture until it’s well-combined.
    • Slowly incorporate some of the reserved meat juice to enhance the sauce's flavor.
    • Season with additional salt and black pepper to taste.
  6. Combine and Serve:
    • Fold the shredded beef and green olives into the sauce in the pan.
    • Cook everything together for about 5 minutes, allowing the flavors to meld.
    • Serve hot with the prepared rice on the side.
