Ingredients:

🧅 1 shallot
🍅 1 tomato
🫑 1 bell pepper
🧄 2 garlic cloves
🌶️ 1 jalapeño
🥬 1 cup of cabbage
🌿 1/4 cup cilantro
🥔 1 chopped potato
🦐 1 1/2 cups dried shrimps
🌶️ Black pepper to taste
🌿 1/2 tsp oregano
🌶️ 1 tsp paprika
🍚 Steamed white rice
💧 Water
🛢️ Cooking oil
🍋 Splash of lime juice
🔥 Spicy sauce (optional)


Instructions:

  1. Preparation:
    • Thinly slice 1 shallot, 1 tomato, and 1 bell pepper.
    • Mince 2 cloves of garlic and 1 jalapeño.
    • Chop 1 potato into small pieces.
    • Roughly chop 1 cup of cabbage and 1/4 cup cilantro.
  2. Cooking the Soup Base:
    • In a large pot, heat a small amount of cooking oil over medium heat.
    • Add the sliced shallot, tomato, bell pepper, minced garlic, and jalapeño. Sauté until softened.
  3. Adding Vegetables:
    • Stir in the cabbage and chopped potato.
    • Pour in hot water, just enough to cover all the vegetables.
  4. Introducing Shrimp:
    • Add the dried shrimps into the pot and pour additional hot water to cover everything well.
    • Season the soup with black pepper, oregano, and paprika.
  5. Simmer:
    • Let the soup simmer on low heat until all the veggies are tender, typically around 20-30 minutes. Stir occasionally.
  6. Serving:
    • Once ready, serve the soup hot over a bed of steamed white rice.
    • Add a splash of lime juice and, if desired, some spicy sauce for an extra kick.
