Perfect for a cookout with a view, this dish combines simplicity with rich flavors that are sure to satisfy.

Ingredients

🥩 1 beef steak
🥚 2 eggs
🥫 1 can of salsa casera
🌶️ 1 Anaheim pepper
🧀 Oaxaca cheese (enough to fill the pepper)
🥑 1 avocado (sliced)
🌶️ Black pepper (to taste)
🧂 Salt (to taste)

Instructions

1- Prep the Ingredients:

  • Wash the Anaheim pepper and cut a slit lengthwise to create a pocket for stuffing.
  • Fill the pepper with Oaxaca cheese and set aside.
  • Season the beef steak with salt and black pepper to taste.

2- Cook the Steak and Pepper:

  • Heat a skillet or grill over medium-high heat and cook the steak to your desired doneness. For medium-rare, cook for about 4-5 minutes on each side.
  • In the same pan, cook the cheese-stuffed Anaheim pepper until it’s slightly charred and the cheese has melted, about 5-7 minutes.

3- Prepare the Egg and Salsa Mixture:

  • In a saucepan, heat the can of salsa casera over medium heat until it begins to simmer.
  • Once the salsa is bubbling, carefully crack the eggs into the salsa. Cover the pan and cook the eggs until the whites are set but the yolks remain runny, about 4-5 minutes.

4- Assemble the Dish:

  • Transfer the cooked steak and cheese-stuffed pepper to a plate.
  • Carefully remove the poached eggs from the salsa and place them alongside the steak and pepper.
  • Slice the avocado and add it on top of the steak and eggs as a fresh garnish.

5- Enjoy:

  • Serve immediately and enjoy your Alaskan-style breakfast with a beautiful view!
