Discover the authentic taste of this rustic and hearty pinto bean recipe. By utilizing a clay pot, you’ll experience enhanced flavors that elevate this comforting dish to a new level. Perfect as a side or a main, these beans are simple yet undeniably satisfying.
Ingredients
🫘 2 lbs pinto beans
🧄 4 cloves garlic
🧅 1/2 onion
🌿 1/4 tsp cumin
Instructions
Prepare the Beans:
Begin by sorting through the pinto beans, removing any debris, broken, or discolored beans.
Rinse the beans thoroughly under cold water to ensure they are clean.
Set Up the Clay Pot:
Place the cleaned pinto beans into a clay pot. The clay pot allows the beans to cook evenly and enhances the flavor.
Make sure the beans fill only half the pot, as they will expand to roughly twice their size.
Add Flavorful Ingredients:
Peel four cloves of garlic and add them whole into the pot.
Add half of an onion, sliced or diced as you prefer, to infuse additional flavor.
Sprinkle 1/4 tsp of cumin over the beans for a warm, earthy note.
Add Water and Begin Cooking:
Fill the pot with enough water to cover the beans fully, leaving some space at the top to accommodate expansion.
Place the clay pot on the stove and bring the water to a boil over high heat.
Simmer the Beans:
Once boiling, reduce the heat to medium and allow the beans to simmer.
Stir occasionally and add more water if necessary to maintain a moderate level of liquid.
Final Touches:
As the beans begin to soften and turn brown, add salt to taste.
Continue cooking until the beans are tender but not mushy, which may take around 2 to 3 hours in total, depending on your heat source and pot.
Storage and Serving:
Serve immediately as a side dish or a main with rice or tortillas.
Store any leftovers in airtight containers or resealable bags; freeze for longer storage or refrigerate for up to 7 days.
