Mexican Rice, also known as Arroz Rojo, is a staple side dish that perfectly complements a variety of main courses. With this rice cooker method, you can easily prepare flavorful and fluffy Mexican Rice with minimal effort. Infused with aromatic spices and herbs, this dish brings a taste of Mexico right to your table.
Ingredients:
🍚 2 cups white rice (long grain or jasmine)
🥄 3 tablespoons cooking oil
🧅 2 tablespoons chopped onion
🧄 2 cloves minced garlic
🧂 2 tablespoons tomato and chicken bouillon
🌶️ 1 jalapeño (whole)
🌿 3-5 stems of fresh cilantro
💧 Water or chicken stock (as per rice cooker measurements)
Instructions:
- Preparation:
- Pre-rinse the rice if it appears powdery, and let it dry in a strainer for at least 15 minutes.
- Cooking:
- Pre-heat the rice cooker using the sauté setting.
- Add in the cooking oil.
- Once the oil is hot, add the rice and sauté for about 5 minutes, stirring frequently until it turns slightly brown.
- Add the chopped onion and minced garlic, stirring them into the rice for one additional minute until fragrant.
- Incorporate the tomato and chicken bouillon, ensuring it's mixed well, then add water or chicken stock according to the rice cooker’s cup indicators.
- Place the whole jalapeño and fresh cilantro stems on top.
- Set the rice cooker to the white rice setting and allow it to cook.
- Finishing:
- Once cooking is complete, open the rice cooker to release the steam for about 5 minutes while on the “keep warm” setting.
- After 5 minutes, close the lid to keep the rice warm until serving.

Total Time: 1 hour
