Ingredients:
🍝 16 oz pasta of your choice
🌶️ 3-4 poblano peppers
🌶️ 1-2 jalapeños (optional, for added spice)
🍶 1 (15 oz) jar of Alfredo sauce
🧂 Salt and black pepper to taste
🥛 1/2 cup chicken stock or pasta cooking water
🧀 4 oz cream cheese (optional, for extra creaminess)
🧴 Neutral cooking oil for roasting
Instructions:
Prep the Peppers:
- Spray or rub the poblano peppers with a light coat of neutral cooking oil.
- Place the peppers in an air fryer at 400°F (200°C) and roast for 10 minutes.
- Once done, let them cool slightly, peel off the skin, and remove seeds.
Cook the Pasta:
- While the peppers are roasting, cook your selected pasta in salted boiling water according to the package instructions. Reserve 1/2 cup of the pasta cooking water if using for blending.
Blend the Sauce:
- Cut the peeled and seeded poblano peppers into pieces.
- In a blender, combine the roasted poblano pieces, jalapeños (if using), cream cheese (optional), and chicken stock or pasta water. Blend until smooth.
Combine and Cook:
- In a large pan, pour the blended poblano mixture and Alfredo sauce together.
- Heat over medium to low, stirring constantly to prevent sticking. Season with salt and black pepper to your liking.
- Once the sauce begins to bubble gently, add the cooked pasta and toss to coat thoroughly.
Finish:
- Turn off the heat and ensure the sauce and pasta are well combined.
- Serve immediately, garnishing with extra cheese or your favorite protein, if desired.
