Ingredients:

  • 🥩 3 lbs beef eye round roast
  • 💧 2 cups of water
  • 🧄 6-8 cloves of garlic
  • 🧅 1/2 onion
  • 🌶️ 8-10 chiles guajillos
  • 🌿 1 bay leaf
  • 🌑 Black pepper to taste
  • 🧂 1 tablespoon salt
  • 🥖 French bread or bolillo bread
  • 🍅 1 tomato, sliced
  • 🥑 1 avocado, sliced

Instructions:

  1. Prepare the Ingredients:
    • Trim the fat from the beef eye round roast.
    • Peel and halve the onion.
    • Remove seeds from the chiles guajillos.
  2. Cook the Beef:
    • Place the trimmed beef, water, garlic cloves, onion halves, chiles guajillos, bay leaf, black pepper, and salt into an Instant Pot.
    • Secure the lid and set the Instant Pot to high pressure for 1 hour.
  3. Shred the Beef:
    • Once cooked, carefully release the pressure and remove the beef from the pot.
    • While the meat is still hot, shred it using two forks.
  4. Make the Salsa:
    • Transfer the garlic, onion, chiles, and some of the liquid from the pot into a blender. Blend until smooth.
  5. Combine and Cook:
    • Add the shredded beef back into the pot.
    • Pour the blended salsa over the beef. Mix well and cook on high heat until the liquid reduces and thickens slightly. Stir occasionally.
  6. Assemble the Tortas:
    • Preheat an air fryer (or oven) and lightly toast the bread.
    • Slice the French bread or bolillo in half.
    • Layer the shredded beef mixture onto the toasted bread.
    • Top with sliced tomato and avocado.
  7. Serve:
    • Wrap the torta securely to hold the ingredients together.
    • Serve immediately and enjoy the delicious flavors.
