A classic Mexican sandwich made with tender shredded beef, fresh vegetables, and a slathering of rich, homemade enchilada sauce, all nestled in soft Telera bread. Ingredients:

  • 🍞 Telera bread
  • 🥩 2 lbs of beef shank
  • 🧅 1/2 onion, chopped
  • 🧄 6 garlic cloves, smashed
  • 🌶 2 chiles de arbol
  • 🧂 1 tsp salt
  • 🧂 1 tsp pepper
  • 🌿 1/2 tsp cumin
  • 🌿 Fresh cilantro (a few stems)
  • 🍅 Enchilada sauce (homemade or store-bought)
  • 🫘 Refried beans
  • 🧅 Onion, sliced
  • 🥬 Lettuce, shredded
  • 🍅 Tomato, sliced
  • 🥑 Avocado, sliced
  • 🌶 Pickled onions and roasted jalapeños (for serving)

Instructions:

  1. Prepare the Beef:

    • In a large pot, place the beef shank and season with salt, pepper, cumin, chiles de arbol, and fresh cilantro.
    • Add the chopped onion and smashed garlic cloves.
    • Cover with water and bring to a boil over medium heat.
    • Reduce heat and let it simmer for about 2 hours, or until the beef is tender and easy to shred.
  2. Shred the Beef:

    • Once the beef is cooked, remove it from the pot and let it cool slightly.
    • Shred the beef, discarding any fat, and set aside.
  3. Cook the Shredded Beef:

    • In a hot pan, add a little oil and sauté the shredded beef.
    • Pour in enough enchilada sauce to coat the beef and add some of the cooking broth.
    • Cook on medium heat until the liquid has evaporated and the beef is flavorful.
  4. Prepare the Torta:

    • Slice the Telera bread in half and spread refried beans on both sides.
    • Layer shredded beef, sliced onion, lettuce, tomato, and avocado onto one side of the bread.
    • Close the sandwich with the other half of the bread.
  5. Toast the Torta:

    • Place the torta on a griddle and toast lightly on both sides until the bread is slightly crispy.
  6. Serve:

    • Serve the torta with pickled onions and roasted jalapeños on the side for an extra kick.
