- 🧅 Onion, sliced
- 🥬 Lettuce, shredded
- 🍅 Tomato, sliced
- 🥑 Avocado, sliced
- 🌶 Pickled onions and roasted jalapeños (for serving)
Instructions:
Prepare the Beef:
- In a large pot, place the beef shank and season with salt, pepper, cumin, chiles de arbol, and fresh cilantro.
- Add the chopped onion and smashed garlic cloves.
- Cover with water and bring to a boil over medium heat.
- Reduce heat and let it simmer for about 2 hours, or until the beef is tender and easy to shred.
Shred the Beef:
- Once the beef is cooked, remove it from the pot and let it cool slightly.
- Shred the beef, discarding any fat, and set aside.
Cook the Shredded Beef:
- In a hot pan, add a little oil and sauté the shredded beef.
- Pour in enough enchilada sauce to coat the beef and add some of the cooking broth.
