Ingredients
For the Avocado Sauce:
🌶️ 2 jalapeños
🧄 2 garlic cloves
🧅 ¼ onion
🌿 Small bunch cilantro (about ½ cup, loosely packed)
🥑 2 ripe avocados
🧂 1 teaspoon salt
💧 1 cup water
For the Tortillas:
🌽 2 cups masa harina
💧 2 cups water
🧂 Pinch of salt

🍗 4 chicken milanesas, seared

Instructions
1- Make the Avocado Sauce:
- In the Ninja Foodi Power Blender & Processor System, combine jalapeños, garlic, onion, cilantro, avocados, salt, and 1 cup of water.
- Blend until smooth and creamy.
2- Warm the Sauce:
- Pour the avocado sauce into a non-stick pan over low heat.
- Rinse the blender with a bit of water to capture all flavors and add it to the pan.
- Stir gently until warm and slightly thickened. Adjust water as needed for your desired consistency.
3- Make the Tortillas:
- In a clear glass mixing bowl, mix together masa harina, water, and a pinch of salt.
- Knead until the dough is soft and slightly sticky.
4- Form Tortillas:
- Divide the dough into 8 equal balls.
- Place each ball between two plastic sheets and press using a black cast iron tortilla press to form thin, round tortillas.
5- Cook Tortillas:
- Heat a non-stick griddle to medium heat.
- Cook each tortilla for about 1 minute per side, flipping it twice, and allow them to puff slightly to ensure even cooking.
6- Assemble Enguacamoladas:
- Dip each cooked tortilla into the warm avocado sauce to coat both sides thoroughly.
- Fold the sauced tortillas into quarters and arrange them on a white enamelware plate with a black rim.
7- Garnish and Serve:
- Top the enguacamoladas with crumbled queso fresco, red pickled onions, and chopped cilantro.
