Roasted Garlic & Bacon Spread

Ingredients:
🧄1 elephant garlic head
🫒 1/4 cup olive oil (divided: 1 teaspoon for roasting the garlic head, and the rest for the blender)
🥓 4 strips of bacon
🥖 Toasted baguette or crackers for serving
Instructions:
- Prep and Roast the Garlic:
- Preheat your oven to 375°F (190°C).
- Cut the tip off the elephant garlic head to expose the cloves.
- Drizzle with 1 teaspoon of olive oil and wrap it in aluminum foil.
- Place the wrapped garlic on a sheet pan lined with parchment paper and roast in the oven for about 25 minutes.
- Cook the Bacon:
- Place the 4 strips of bacon on a separate baking sheet or oven-safe dish.
- Roast in the preheated oven alongside the garlic until crispy, about 15-20 minutes.
- Blend the Ingredients:
- Once roasted, the garlic skins should be easy to remove. Squeeze the softened garlic cloves into a blender.
- Add the remaining olive oil, a pinch of salt, and a dash of black pepper to the blender.
- Break the crispy bacon into pieces and add to the blender.
- Mix it into a Spread:
- Blend all the ingredients until smooth and well combined.
- Taste and adjust seasoning if necessary.
- Serve:
- Transfer the spread to a serving dish and enjoy it with toasted baguette slices or crackers.
