Ingredients:

For the Shredded Beef:
🥩 1 bottom round roast
🧅 1/2 onion
🧄 4 garlic cloves
🍃 2 bay leaves
🌶 1 teaspoon black peppercorns
🧂 Salt to taste
For the Refried Beans:
🥫 1 can of pinto beans
🐖 1 tablespoon of lard
🧂 Salt to taste
For the Tostadas:
🌽 Corn tortillas
🛢 Cooking oil
🥬 Shredded lettuce
🍅 Diced tomato
🧀 Queso fresco
🥛 Mexican crema
🌶 Salsa verde


Instructions:

  1. Prepare the Shredded Beef:
    • Place the bottom round roast in a pot along with the half onion, garlic cloves, bay leaves, black peppercorns, and a generous pinch of salt.
    • Cover everything with water and set it on medium heat.
    • Cook for approximately 90 minutes, or until the beef is tender and easy to shred.
  2. Make the Refried Beans:
    • In a skillet, heat the tablespoon of lard over medium heat.
    • Add the pinto beans and mash them using a potato masher. Add a bit of water if the mixture is too thick.
    • Season the beans with salt to taste and keep them warm.
  3. Prepare the Tostadas:
    • Heat cooking oil in a pan over medium-high heat.
    • Fry the corn tortillas one at a time until crispy, then remove them from the oil and place on paper towels to drain any excess oil.
  4. Assemble the Tostadas:
    • Spread a layer of refried beans on each crisp tortilla.
    • Top with a generous amount of shredded beef.
    • Add shredded lettuce and diced tomato.
    • Sprinkle queso fresco over the top and drizzle with Mexican crema.
    • Finish with a spoonful of salsa verde for a fresh and tangy kick.
