Mexican Style Tostada

For the Shredded Beef:

🧅 1/2 onion
🧄 4 garlic cloves
🍃 2 bay leaves

🥫 1 can of pinto beans
🐖 1 tablespoon of lard
🧂 Salt to taste
For the Tostadas:
🌽 Corn tortillas
🛢 Cooking oil
🥬 Shredded lettuce
🍅 Diced tomato
🧀 Queso fresco
🥛 Mexican crema
🌶 Salsa verde
Instructions:
- Prepare the Shredded Beef:
- Place the bottom round roast in a pot along with the half onion, garlic cloves, bay leaves, black peppercorns, and a generous pinch of salt.
- Cover everything with water and set it on medium heat.
- Cook for approximately 90 minutes, or until the beef is tender and easy to shred.
- Make the Refried Beans:
- In a skillet, heat the tablespoon of lard over medium heat.
- Add the pinto beans and mash them using a potato masher. Add a bit of water if the mixture is too thick.
- Season the beans with salt to taste and keep them warm.
- Prepare the Tostadas:
- Heat cooking oil in a pan over medium-high heat.
- Fry the corn tortillas one at a time until crispy, then remove them from the oil and place on paper towels to drain any excess oil.
- Assemble the Tostadas:
- Spread a layer of refried beans on each crisp tortilla.
- Top with a generous amount of shredded beef.
- Add shredded lettuce and diced tomato.
- Sprinkle queso fresco over the top and drizzle with Mexican crema.
- Finish with a spoonful of salsa verde for a fresh and tangy kick.
