Spicy Pumpkin Pasta

Ingredients:
🎃 1 pie pumpkin
🥑 4 tbsp of avocado oil
🧅 1/2 onion
🧄 3 garlic cloves
🌶️ 3 Chiles de Arbol
🧈 5 tbsp of butter
🧂 2 tsp of salt
🧀 1 block of cream cheese
🍗 3-4 cups of chicken broth
🍝 1 lb of elbow pasta
🌰 Toasted pumpkin seeds for garnish
Instructions:
Prepare the Pumpkin:
- Preheat your oven to 400°F (200°C).
- Cut the pie pumpkin in half and remove the seeds. Cut the pumpkin into smaller pieces.
- Place the pumpkin pieces on a baking sheet and drizzle with avocado oil.
- Roast for 25-30 minutes or until the pumpkin is soft and tender. Set aside to cool.
Prepare the Aromatics:
- While the pumpkin is roasting, finely chop the onion, garlic cloves, and Chiles de Arbol (remove stems).
- Heat 5 tablespoons of butter in a pan over medium heat.
- Add the onion, garlic, and chilies. Cook until the onions are translucent and fragrant.
Blend the Pumpkin Sauce:
- Once the roasted pumpkin is cool enough to handle, remove the skin.
- Place the roasted pumpkin, cooked aromatic mixture, salt, and chicken broth in a blender. Blend until smooth.
- If needed, blend in batches and incorporate the cream cheese into one of the batches for a creamy consistency.
Cook the Pasta:
- Boil the elbow pasta in salted water according to package instructions until al dente. Drain and set aside.
Combine and Serve:
- Pour the pumpkin sauce into a large pot set over medium heat.
- Mix in the cooked pasta until well coated.
- Adjust the seasoning with additional salt if necessary.
- Serve hot, garnished with toasted pumpkin seeds.
Cooking Tips:
- Adjust the number of Chiles de Arbol to your spice preference.
- Feel free to substitute with other types of pasta if elbows are not available.
- This dish can also be made with butternut squash or other varieties of pumpkin.
