Spicy Red Potatoes (Papitas Picosas)
Indulge in the fiery and tangy flavors of Spicy Chipotle Lime Red Potatoes. Perfect as a side dish or a spicy snack, these potatoes bring together the earthy taste of chipotle peppers and the zesty burst of lime, creating a delicious explosion of flavors.
Ingredients
🥔 3 lb red potatoes
🌶️ 3 dried chipotle peppers
🌶️ 20 chiles de árbol
🍶 1 cup white vinegar
🧅 1/4 onion
🧄 2 garlic cloves
🧈 1/2 cup melted butter
🧂 Salt to taste
🌶️ Black pepper to taste
🍋 1 cup fresh lime juice
Instructions
- Preheat your oven to 400°F (200°C).
Prep the Potatoes:
Place the red potatoes in a pot of boiling water. Cook them for about 5 minutes. Once done, drain and set them aside.
Prepare the Pepper Sauce:
In a separate pot, add the dried chipotle peppers and the chiles de árbol. Cover them with water and boil for about 15 minutes or until they are tender.
Let them cool down slightly, then add the boiled peppers to a blender.
Add the white vinegar, chopped onion, garlic cloves, and some of the water from the boiled peppers into the blender.
Blend the mixture until you get a smooth sauce.
Combine Ingredients:
In a mixing bowl, take the blanched potatoes and add half a cup of melted butter. Season with salt and pepper to taste.
Pour in the fresh lime juice and add as much of the blended salsa as you prefer, based on your spice tolerance. For optimal flavor balance, a cup of salsa is recommended. Toss the potatoes well to coat them evenly with the mixture.
Bake the Potatoes:
Transfer the spicy lime-coated potatoes to a baking dish or tray.
Bake in the preheated oven for 20 minutes or until the potatoes are soft and cooked through, with crispy edges.
Serve:
Once baked, remove the potatoes from the oven. Allow them a few minutes to cool slightly.
