Ingredients:
🧅 8 big green onions (Mexican green onions)
🌶️ 3 to 4 cups of assorted sweet peppers

🥩 2 lbs flank steak (cut into strips)
🧄 1 garlic clove (sliced)
🍈 1/2 lime (juice)
Instructions:
- Prep the Ingredients:
- Start by preparing the green onions. Trim them, then slice them into pieces approximately two centimeters in length.
- Slice the sweet peppers and red Thai chili pepper to your desired thickness.
- Place your flank steak in the freezer for about an hour, making it easier to slice. Once partially frozen, cut it into strips against the grain to ensure tenderness.
- Prepare to Cook:
- Heat a large pan over medium-high heat. You're going to cook the steak first, so ensure the pan is hot enough to sear the meat properly.
- Season the flank steak strips generously with black pepper and kosher salt.
- Cook the Fajita Filling:
- Add only the white parts of the green onions to the pan first and allow them to soften a bit.
- Sear the seasoned flank steak strips in the pan. If there’s a splatter risk due to the frozen nature of the meat, cover the pan partially with a lid.
