Ingredients
🥓 1/4 cup of pork lard
🥓 16 oz of smoked bacon
🌭 7 oz of pork chorizo
🧅 1/4 of an onion, thinly sliced
🌶️ 1 jalapeño, chopped
🌶️ 2 tablespoons of chipotle puree in adobo
🫘 5 cups of pinto beans with liquid
🔥 Hot sauce to taste (buffalo or Valentina)
🧀 4 slices of American cheese (or more for creaminess)
Instructions
Prep the Bacon:
In a pan over medium heat, add the pork lard and let it melt.
Add the smoked bacon and fry until crispy. Once crispy, remove from the pan and set aside.
Cook the Chorizo:
In the same pan, add the chorizo. Break it apart with a spatula and cook for a few minutes.
Sauté Vegetables:
Add the thinly sliced onions and chopped jalapeño to the pan.
Cook until the vegetables are soft and fragrant.
Build the Base:
Stir in the chipotle puree, blending well with the chorizo and vegetables.
Blend the Beans:
Add the pinto beans and their liquid to the pan, along with the crispy bacon and hot sauce.
Using an immersion blender, blend the mixture until smooth. If you don't have an immersion blender, transfer to a regular blender, blend, and return to the pan.
Incorporate Cheese:
Add slices of American cheese to the blended mix in the pan. Stir gently, allowing the cheese to melt completely.
Finish and Serve:
Once the cheese is fully melted and the dip is creamy, remove from heat.
